
Oftn Studio shapes NTBR bakery cafe in Daejeon as a minimal space for bread ritual
NTBR (NUTTY BEURRE) by Oftn Studio stands as a two-story, 165㎡ bakery café in Yeonchuk-dong, Daejeon, where the gentle presence of water and forest defines its atmosphere.
The café is carefully placed beside a small reservoir, framed by the trees of Gyejoksan, with architecture that deliberately avoids excess to allow the site’s natural qualities to breathe.
Its presence is raw yet refined, relying on exposed concrete and galvanized metal sheets that anchor the structure firmly into the terrain while simultaneously withdrawing to let nature dominate.

The interior is guided by clarity and hierarchy, with bread placed unequivocally at the center of the narrative. The bakery display, aligned with the central axis of the plan, is softly illuminated from below, transforming everyday loaves into quiet icons of the brand’s philosophy.
This focal point acts as both anchor and guide, with attention naturally flowing toward the counter, where planar lighting creates a dialogue between brightness and shadow.
Behind, a layered wall of steel lattice and glass gives fragmented glimpses of the bakers in motion, capturing a sense of honest craft suspended between visibility and privacy.

Vertical galvanized pipes punctuate the space like architectural markers, embodying the layered process of bread-making itself. Their repetition recalls the accumulation of ingredients that eventually culminate in something greater, making the Oftn Studio architecture an allegory for the bakery’s ethos.
The grated ceiling further choreographs directionality, extending the axis that begins with the bread display and carrying it through the spatial sequence. Each gesture, though minimal, is deliberate—designed to heighten rhythm, order, and movement.


Spatial transitions are integral to the design. Moving toward the restroom, visitors encounter a carefully orchestrated shift: passing the washbasin, crossing a partition, and arriving in a pocket of natural light.
This choreography transforms utility into sensory experience, reminding visitors that each step within the space is a moment of encounter with time, light, and atmosphere.

NTBR by Oftn Studio is more than a café; it is a stage where bread, landscape, and people share equal importance. Visitors are invited not only to eat but to experience the passage of time framed by architecture and environment.
The design captures an intimate dialogue between permanence and impermanence, between human ritual and the patience of nature.
What emerges is an architecture that celebrates humility, rooting the brand’s identity in something larger than commerce. NTBR becomes a vessel for both memory and daily ritual, a modest space that resonates far beyond its walls.
