
Mallol honors Austrian heritage with Krume Bäcker
Krume Bäcker in Costa del Este, Panama, presents a refined interpretation of architectural clarity that reflects its Austrian heritage while responding to local culture and climate.
Designed by Mallol with an interior area of 193 square meters, the bakery integrates sustainability as a fundamental value rather than an afterthought.
Every detail, from its materials to its spatial organization, aligns environmental awareness with an elevated dining experience, positioning the project as a benchmark for responsible commercial design.

The heart of the interior lies in the use of compacted earth for the bar and interior walls, executed by Aparato using unprocessed local soil. This method minimizes environmental impact by eliminating energy-intensive manufacturing and offers thermal stability and acoustic comfort.
Its textured finish reinforces the bakery’s identity while preserving a sense of authenticity. The collaboration with local artisans not only strengthened community ties but also preserved knowledge of traditional construction techniques rarely applied in urban Panama.

Furniture by Mallol Lifestyle Studio, produced in partnership with The Alma Studio, reinforces the project’s commitment to responsible sourcing. Native hardwoods recovered from the Bayano Reservoir, long submerged since a historic flooding, were carefully retrieved with controlled methods that protect surrounding ecosystems.
Managed with the participation of the Guna Madugandí community, the timber was kiln-dried over several months to ensure resilience. The resulting tables and chairs add warmth and texture while reducing reliance on newly harvested wood.

The spatial layout is deliberately open and intuitive, encouraging both quick visits and extended gatherings. Clean lines and neutral tones create a calm visual field, while natural materials enrich the sensory experience without distraction. Circulation flows smoothly between zones, and seating configurations provide flexibility for individuals or groups.
Lighting focuses on the bakery’s signature breads, emphasizing craftsmanship without overwhelming the environment, and enhancing the subtle rhythm of the interior.

Every element serves a purpose beyond aesthetics. The design functions as a platform for environmental responsibility and social engagement, demonstrating that commercial interiors can adopt sustainable practices without sacrificing operational efficiency or aesthetic refinement.
The restrained use of materials, combined with careful sourcing and traditional methods, extends the project’s relevance in a rapidly developing urban setting. Through these choices, Krume Bäcker reflects a commitment to longevity, cultural sensitivity, and low-impact design that resonates within Panama’s evolving architectural narrative.

By intertwining heritage, sustainability, and contemporary needs, the bakery illustrates a path forward for environmentally conscious architecture in commercial spaces.
